Panel 01 - Signature panel (butcher eviscerating a pig)
The pig has been suspended by its hind legs from a gambrel (a 'V' shaped bar with hooks at each end, still used by butchers to support a carcass in the initial stages of butchhery). The butcher slits open its belly with a curved knife. To the right is the trestle table on which he will finish the job and/or present the meat for sale.
